微臭，但无霉败的臭气；有引湿性，是以胰蛋白酶、胰淀粉酶、胰脂肪酶为主所组成的多种酶的混合物，水溶液煮沸或遇酸即失去酶活力。本品在中性或弱碱性环境中（酸碱度6.8～8.5）可促进蛋白质、淀粉及脂肪的消化。有吸湿性。溶于水呈微浑溶液，不溶于乙醇和乙醚。
